Gazpacho (total calories 100)

  • 1 cup sliced cucumber (14 calories)
  • 2 tablespoons minced red onion (5 calories)
  • 1 medium tomato, cored and cut into wedges (48 calories)
  • 1/4 red bell pepper (11 calories)
  • 2 teaspoons red wine or balsamic vinegar (2 calories)

  • 1/2 teaspoon ground coriander
  • coarse salt and ground pepper

Place in a food processor and whirl until slightly chunky. Season with salt and pepper. Serve chilled.

Deviled Eggs

  • 1 hard-boiled egg (75 calories)
  • ½ teaspoons light mayonnaise (25 calories)
  • ¼ teaspoon Dijon mustard (3 calories)
  • salt, paprika, and cayenne

Halve egg, scoop out yolk and transfer to small bowl along with mayonnaise and mustard. Add salt, paprika, and cayenne to taste; lightly mash and spoon mixture back into whites.
