Why is this recipe sooooo good? I love it! it's great for a fun dinner party too. OLE!

Made this for dinner the other night and it was a hit! Very easy, filling, and -- most importantly -- delicious! I haven't made many vegetarian dishes, so I was a little worried it wouldn't turn out right, but even my meat-and-potatoes-loving husband gobbled this up!!! Definitely a keeper!

I omitted the beer and used chicken broth instead (okay, so it's not vegetarian anymore if you do that... but it's still meatless!). I also didn't have any jalapenos, so I added in some crushed red pepper flakes and chili powder for extra heat and flavor. I didn't trim the tortillas; just used a 10" pan and wedged them in place. I also only had 3 tortillas, so I had to divide up the filling a little differently, but still turned out great!

I could even see adding in some chopped chicken breast next time... mmmm, I'm making myself hungry, LOL!

WE LOVE THIS ONE! We've been making this at our house since it first appeared in the magazine. So good!

I LOVE THIS. It is my go to meal when I have to make a meal for a friend that has had a new baby, etc. I also put it in a 13x9 pan so that it is a little easier to store, and transport. The flavor appeals to everyone, and with a little fresh guacamole and sour cream it is better than out to eat!
