Whenever I'm feeling warm and fuzzy about my job, I think of this recipe -- it's the first Everyday Food recipe I ever cooked and it shows off what we do best: easy and fast, but inspiring, too. You cut slits in chicken breasts and stuff them with creamy goat cheese and sweet apricots, then coat them with breadcrumbs and almonds -- nuts and stone fruit partner perfectly. I warm up some corn for the kids and make steamed asparagus for us, and everyone's, well, warm and fuzzy.
PREP: 30 minutes
TOTAL: 50 minutes
