The thing I love about this recipe is the way the pureed spinach combined with the scallion and cilantro cooks down to a delicious puree right in the dish. Plus, I love the corny goodness of the tortillas.

I made this last night. . .very tasty and super easy! But my husband is not a fan of beans. Does it taste good with ground beef or chicken?
