Spaghetti Carbonara
Tonight I want something quick and easy. The first thing that springs to mind is pasta. But what to do? I’m thinking Spaghetti carbonara. It’s fast and supereasy to prepare. I’ve had this recipe memorized since the first time I cooked it, and now I throw it together without even looking.
Do you have any go-to dishes that you cook without having to look at the recipe?

-Risotto (in fact, I just did a blog post/photo tutorial on how easy risotto is!)
-Absorption pasta
-Tomato sauce
-A faux-cassoulet white bean stew I make in the winter
-Now that I made it once, the Everyday Food crispy pork chops--the ones with mustard instead of egg whites, and panko crumbs? Awesome and so easy.

I love this dish. Anything with rich cheese and tasty olive oil -- plus panchetta or bacon -- delightful!
I can make chili with no recipe. Not much else.
