I'm trying to cram more salmon into my diet (gotta get those Omega-3s.) But due to a recent column, it's feeling more like a luxury than a necessity. This recipe stretches a pound of fish to serve four -- perfect!

How about using canned salmon? All canned salmon is wild salmon (better for you) and most of it is canned in the U.S. (Alaska). It's a lot cheaper, too (maybe not as cheap as it used to be with the shortage, but canned will always be cheaper).

Hi Barbara, that's a great idea. I've actually never tried canned salmon, but I'm eager to now. Seems like it would be perfect in dishes like this that require the fish to be in pieces. Has anyone tried this recipe (or a similar one) with canned salmon?
