spinach and goat cheese or gruyere. gruyere makes it taste just like fondue, so it is almost decadent. a really nice treat. when i'm feeling like comfort food, i go for classic ham and cheese. you can't go wrong!

I love breakfast for dinner. I usually throw in whatever is on hand - onions, ham or bacon, tomatoes, cheese and green peppers are usually a winning combo in our household.

super decadent suggestion...BRIE. mmmmm...
we just had a huge egg scramble for dinner tonight...with whatever I had in the fridge mixed in! I love breakfast for dinner, especially in the hot summertime...anyway, tonight's eggs were a tad watery (not do to undercooking). we decided it was the tomatoes. I'm glad you wrote this article and put "seeded and diced tomatoes" on your list...I hadn't seeded them and I think that was the downfall! thank you!

Omelet is my favorite breakfast item. I love having it for dinner as well. I pretty much just add whatever I have in my fridge to my omelet. But have to have my omelet with gooey cheese though. I'm getting hungry just thinking about it now. Definately will have omelet for breakfast tomorrow. ^^

Omelets are only as good as the eggs they are made with - the fresher, the better and no commercial eggs, please. If you live in the city, try farmers markets or stores like Whole Foods who try to support sustainable food sources.
I love Smoked Cheddar on mine!
