Dr. Brent Ridge brought some of his homemade goat's milk brie to put on a sandwich and boy, was it good. Super creamy and nutty with a slight bite.
Brie is probably the most well-known French cheese and although it's generally made with cow's milk, there's no reason it can't be done with other milks, too.
So, what to put with this cheese? Ginger preserves, which come in jars and can be found with jams and jellies, seemed to be a perfect match -- sweet and spicy. Then I added some sliced pears. Just three ingredients (not counting the bread) and truly delicious.

THE RECIPE: Brie and Pear Sandwiches
Makes 4 sandwiches
Ingredients
1 small wheel ripe brie cheese (about 8 ounces), rind removed
4 ciabatta rolls
1/2 cup ginger preserves
1 large ripe pear, halved, cored, and thinly sliced
Directions
1. Spread the cheese on
both sides of each ciabatta. Top one side with ginger preserves and
pear slices and close.
