Thanks to the piles of ripe produce at the market, I love summertime cooking. But standing at the stove can get me a little hot under the collar. These quesadillas are just right when I want a quick meal that doesn't heat up the kitchen: they're packed with summery peppers and spicy sausage, but are cooked in the microwave instead of a skillet.
Speaking of heat, I just adore chorizo -- it's a zesty sausage flavored with paprika that you can find in the meat or deli section of the supermarket. The cooked Spanish variety is what you're looking for here. If you have extra, chop it up for another quick-cooking dish: chorizo and scrambled eggs.

I am definately going to try the Chorizo and Red-Pepper Quesadillas. They sound delicious! Quesadillas of all kinds are a favorite in my house. Another easy and quick meal solution that I turn to when it is hot outside is Grilled Pizza. I keep ready to cook pizza crusts on hand, brush them with a basil-oregano flavored olive oil and pop the crusts on the grill. I leave them on for about 2 minutes on each side (until crisp and marked with grill lines). I usually have a few different types of jarred pizza sauces and marinaras as well as a variety of cheeses and veges. I top the crusts with the ingredients and move them over to indirect heat putting the grill cover down for about 10 minutes or until the cheese is melted and bubbly. Last weekend it was red pepper, fresh chopped garlic, caramelized onions, fennel and fresh mozzarella topped with fresh basil leaves. My kitchen stayed clean and cool and we had a great meal.
