I wish I could have a piece of this spicy, tongue-tingling chicken right now. The marinade, a heady mix of scallions, jalapeno, allspice, and thyme, is tempered by a little oil, sugar, and lime juice. Perfect to start preparing in the morning or the night before. Then fire up the barbie and you're ready to go.
I think I'd like some sweet potatoes with the chicken. What about you?

yum..steamed sweet potatoes with just really good extra virgin olive oil and grey sea salt sprinkled on top...perfect for the 4th

I love sweet potatoes with a little grey (or is it gray) sea salt, a touch of cayenne and some fresh lime juice - who needs butter
