There are very few dishes that are just as good cold as they are hot.
I love this pasta hot the first day and then the next day as a cold pasta salad. Two for the price of one. I even throw in leftover chicken to give it a boost. Is there an Everyday Food recipe you like better the second day?

I can't wait to make this! It just seems like the perfect summer dish and I love those recipes that do double duty.

It is WAY too hot to turn the oven on! Why not grill the veggies - maybe some eggplant too? A Basalmic or Pesto dressing would also be nice. YUM!

I am obsessed with this dish! It is SO amazing, my husband wants it every night. The onions are so much better roasted like this, and all the squash and yummy veggies are in season at the fresh market! LOVE it!

P.s. It doesn't need any kind of dressing, just a little fresh grated parm and the fresh basil. Soo good and not a bunch of extra stuff.

I love the Grilled Turkey and Turkey Chilaquiles from the July/August 2003 issue. Those chilaquiles are AWESOME!!!
I'll have to give this salad a try--looks awesome!
