I love ricotta. Did you know it's not really a cheese? People call it a cheese, but it's actually made from the whey leftover from cheesemaking. Anyway, it's just good. Especially on toast with the ripest summer tomatoes, sprinkled with salt and pepper.
I have a friend who eats ricotta sprinkled with sugar. How do you eat yours?

I hollow out tiny cherry tomatoes and season the ricotta with some crumbled cooked sausage and ground pepper for small bites for parties!
Living in Italy I can get fresh cow's milk ricotta and sheep's milk ricotta which is my favorite.
As a dessert I whip it up with some powdered sugar and stir in tiny chocolate chips.

I know this sounds weird, but it's delicious: I mix cocoa powder, cinnamon, espresso powder, a bit of vanilla, and some Splenda with low-fat ricotta. It's my own version of a dessert suggested by a diet I was on a while ago. I loved it so much I kept it after I was done witht he program. I lived in Italy for a while and I know the low-fat ricotta we get here is almost offensive to the real-deal ricotta you find there, but for the purpose of figure-friendlyness, it does the trick!

I absolutely love ricotta mixed with sugar and a little vanilla extract. I tell myself that it is healthier than ice cream but I don't actually know if that is true. I just love it!
I also make a good ricotta and brocolli pizza. Yum!
I will find any excuse to eat ricotta. I love love love it!

Emma! Just watched you do the panko crusted pork chop. Finally had time to watch my tv recordings. Great tip to bake and brown the panko first. I'll be trying that soon.
