I'm heading off to my sister's backyard to make these for dinner. There may be 6 of us there, but I'm sure with a bunch of side dishes this will be plenty.
Coriander seeds have a somewhat citrusy flavor, dill is a little herbal, and red-pepper flakes and peppercorns add heat. It's a nice combo, but don't fret if you only have ground coriander and pepper; they'll work fine.
Rubs are a great way of packing on flavor and you can play with them, adding what you like. Serve the steak with a potato salad and perhaps green beans vinaigrette- both can be made ahead.
