The new crop of tomatoes is finally here! Now that my favorite single item of summer produce is officially off the hook, I can unabashedly consume pounds of tomatoes from now until the season ends. As you probably know, perfectly ripe summer tomatoes need little adornment, and this recipe makes ingenious use of them in their raw state, which also means the recipe's super quick!

Pasta with Tomatoes and Pine Nuts






The combination of toasted pine nuts and tomatoes with pasta is terrific. For a variation try adding some crumbled goat cheese. The creamy, tangy flavor of the cheese pairs beautifully with the toasty richness of the pine nuts. Find the whole recipe here ~
