Every time I see the photo of these fajitas, I want to make them for dinner. I love Mexican food, but I don't always want a blanket of bubbling cheese and a mountain of rice and beans. Sometimes, I just want earthy spiced meat, fresh cilantro, and plenty of vegetables, and these fajitas fit the bill. Bonus: those clever folks in the Test Kitchen have made them easy enough for a weeknight meal.
I love these fajitas topped with a dollop of sour cream, but you could mash up an avocado with a bit of salt for a cheater's "guacamole" instead!
