Not sure what to do with that little bit of meat you’ve got leftover from last night’s dinner? Soups, pastas and salads are always a good bet. One of my favorite dinners makes use of 8 ounces of leftover cooked beef.
Now I happen to use beef from a cooked brisket or stew, but you really could use whatever leftover meat you’ve got. If you do happen to make a stew or braise some meat with vegetables, save some of those vegetables and use them, too.
Cut them all into bite-size pieces, simmer them in some broth, then toss with hot cooked pasta, some grated Parm and a knob of butter.
Dinner is served.
