No apologies, I love peanut butter. Crunchy is my favorite but, in a pinch, creamy will do just fine. It's one of those ingredients that I always have in my kitchen cabinet.
It's not just for slathering on a piece of bread. If I'm looking for a quick noodle dish I might whip up our lighter sesame noodles or, for a more elaborate preparation, whole-wheat spaghetti with vegetables and peanut sauce.
The beauty of both of these dishes is that you can easily play around with them and add whatever vegetables or protein you've got on hand. Or simply make the sauce and toss it with some pasta. It's good hot or cold -- so make enough for lunch the next day. Or if you've got some chicken on hand, try this easy sandwich I made on my radio show.
