Risotto has got to be one of the ultimate one-pot comfort food meals. Arborio rice, a fat, medium-grain rice from Italy releases its starch as it's stirred and cooked, making for a super creamy dish. We've swapped in some tomatoes and their juice for broth (which you warm, okay, in a second pot--it's a small cheat but so worth one more pan) and added a couple of links of sweet Italian sausage and a big bunch of fresh spinach to make this dish a true all-in-one dinner.
