What's your favorite quick and elegant dinner dish?






My fave quick & elegant dinner dish is probably breaded chicken cutlets topped with arugula, tomato & red onion salad w/ balsamic vinegar. Serve it with a starch and a green vegetable for a fairly balanced meal.
The above would also be good, I presume, with mozzarella or fontina and prosciutto in lieu of goat cheese.
