Thanksgiving will be here in exactly two weeks, and this year, I'm not cooking the feast (I'll be visiting a friend in Amsterdam instead, so I'm not complaining!). But I still have the urge for turkey, stuffing, and all the trimmings.
To satisfy my craving, I'll be making this Stuffed Chicken Breast instead. The recipe calls for a roaster chicken breast -- a delicious cut that's really easy to stuff -- and one that cooks up much faster than a turkey! It's just the right size for a dinner for four. Instead of roasting broccoli to serve alongside, I might roast chunks of butternut squash instead to make it really feel like a fall holiday.
