On "Everyday Food," we cover all kinds of noshes, from seasonal dishes to comfort food favorites. But whether we're discussing a great way to add flavor to a meal, a snack for the kids, or a delicious idea for entertaining, cheese continues to find a special place in all of our palates -- and stomachs!
Lou DiPalo, proprietor of DiPalo's Fine Foods in New York City, recently joined Betsy Karetnick in the studio to explain the history of Italian cheeses.
There are more than 300 varieties of aged Italian cheeses. Lou was kind enough to bring in a few samples for us to enjoy.
Lou explained that Pecorino Romano cheese is from the Roman countryside and has been around for 2,000 years!
Fresh ricotta was a main staple in an Italian farmer's household and was considered "peasant food."
Why does Parmigiano Reggiano have a white, grainy texture? It's due to the protein and calcium in the cheese, which causes it to be a little sweaty and delicate.
What's cheese without a little extra something? Lou brought along some delicious spreads for us to taste with the cheeses.

I love buying Muenster cheese from the deli and eating it with crackers. I also devour Laughing Cow's light cheese. The wheel-shaped cheese are handy for snacking.

I love cheese! I studied in Paris for 6 months and my love for cheese was born. These pictures make me remember all the different types of cheese I got to sample while in France!
