Well, this one caused a stir in the studio. I wish I had taken a picture of Shavon, our engineer at Everyday Food radio, and Monty, my producer, trying a beet. Beets seem to be one of those love-'em-or-hate-'em vegetables –- and I can't quite figure out why.
The beets for this sandwich came from Brent Ridge's farm.
If you've never roasted a beet, give it a try; it's a whole different kind of animal, umm, vegetable. Oh, and if you get them with the greens attached, clean and cook the greens the way you would spinach.
THE RECIPE: Roasted Beet Sandwich
Ingredients
1 pound beets (roots only)
1 tablespoon balsamic vinegar
1 teaspoon olive oil
10 ounces feta cheese
1/4 cup snipped fresh dill
2 scallions, thinly sliced
1 teaspoon grated lemon zest
Ground pepper
8 slices rye, whole grain, or pumpernickel bread
Directions
1. Preheat oven to 400 degrees. Wash beets and wrap in foil. Place on a parchment-lined baking sheet (to catch any drips) and bake until beets yield to gentle pressure, about 1 hour. When cool enough to handle, using a paper towel or kitchen glove peel each beet (the skin will slip off). Thinly slice and toss with vinegar and oil.
2. While beets bake, place feta in a food processor along with 2 tablespoons water and puree until smooth. Add dill, scallions, and lemon zest; season with pepper and pulse to combine.
3. Spread feta mixture on bread. Place beets on top of 4 slices and close sandwiches.

We just love beets and caused quite a stir with a recent beet dish. We collected our garden beets and made a red beet ice cream. It was just delicious! The sweet earthy flavors of beet root transcended beautifully to ice cream.
Unfortunately, those who dislike beets frowned at our beet ice cream! It was lots of fun to see everyones reaction.
The sandwich looks just lovely, we'll have to collect some more beets for this sandwich lunch!
