For a little over a year, Betsy has been challenging you to incorporate more fruits and veggies into your meals. Last month, we welcomed 300 new members to our fruit and veggie club, and also decided to "mix things up," by introducing Eleven Madison Park's Sam Lipp to the Fruit & Veggie Challenge.
Sam joined us on the show for Betsy's Birthday, and was so intrigued by her fruit and vegetable quest, that he decided to take her up on the Challenge and craft cocktails to go with her dishes!
We hope you'll enjoy this week's delicious dishes, along with Sam's creative cocktails.
Sauteed Asparagus and Peas
Black-Bean Tostadas with Corn Relish
Mixed Berry Terrine
Sam's Fruit & Veggie Cocktails
Improved Bloodhound (goes with the Sauteed Asparagus and Peas)
Ingredients:
1.5 ounces London Dry Gin
1 ounce Dry Vermouth
1 ounce Vermouth Blanc (a slightly sweeter Vermouth that is still white)
2 dash Bitter Truth Celery Bitters
Directions:
1. Stir with ice and strain into a martini glass. Garnish with a lemon twist and 2 dashes more of the Celery Bitters.
Pineapple Bourbon Sour (goes with the Black Bean Tostadas with Corn Relish)
Ingredients:
2 ounces Bourbon
2 ounces Pineapple Syrup (juiced fresh pineapples sweetened / cooked with simple syrup)
3/4 ounces lime juice
Directions:
1. Shake with ice and strain into a double old fashioned glass with fresh ice. Garnish with a wedge of pineapple.
Velvet Cobbler (goes with Mixed Berry Terrine)
Recipe from "Jerry Thomas' Bartenders Guide"
Ingredients:
2 ounces Amontillado Sherry
1 and 1/4 ounces Mosel Riesling
1/2 ounce Lemon Verbena Syrup (simple syrup cold steeped with lemon verbena for 48 hours)
Mixed berries, to taste
Directions:
1. Shake with ice all liquid ingredients and strain into a Belgian Beer Glass with crushed ice. Garnish with fresh berries.
